Vegieburgers

1/2 onion 1 large carrot 1 large zucchini 3 med potatoes 1 cup of oat flour 1 cup breadcrumbs and/or LSA soy milk margarine salt, pepper, ground chilli, cumin and coriander.
- micro-zap the taters till they’re squishy enough to mash. then attack them with the masher and a bit of soy mlk and marg. I always leave skins on when i do smashed taters, don’t see the point in wasting time peeling!
- while taters are in micro-zapper, grate the carrot and zucchini. dice onion
- add vegies to mashed taters with seasonings and slowly add oat flour till it’s tough enough to roll into balls. -smoosh the balls into flat patties, coat with LSA or breadcrumbs (LSA tastes better, but breadcrumbs cook quicker)
- pan fry each side about 3 mins. -wait to cool and then proceed with face-stuffing. don’t share with anyone, except me.
